As the chef-patron of the café I draw on my cultural upbringing in the Dordogne region of South West France, where good food and good wine marry themselves to good company. I am passionate about good quality ingredients and favour seasonal produce and local suppliers whenever this is possible and whenever this does not compromise on the quality. As a scratch-cook I don’t believe that food should be rushed and as such please don’t be offended if it feels a little slower than your average café – but believe me for the intensity of the quality to shine through it really is worth that extra 5 minutes. My wife Sarah makes all our lovely cakes and puddings on display in our window - that is when she is not looking after our 4 terrible boys - so this really is a family business! In fact we wanted our youngest son Frederick to connect with his French origins so much that we named the café Frédéric after him!
